Cook the pasta in salted boiling water, according to packet instructions Melt the butter in a medium pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised. Turn the heat down to low and add the butter to the pot.

- Melt the butter in a pan and add the greens to wilt.
- Once the greens are cooked add slices of the blue cheese to melt.
- Drain the pasta once it's cooked, keep a spoonful of the pasta water.
- Add the pasta water to the greens and cheese and pour over the pasta.
When the butter has melted, add the noodles back to the pot and stir to coat. Slowly add the blue cheese, stirring the noodles so the cheese melts. While pasta is cooking, combine your herbs, nuts, garlic, olive oil and salt in a food processor and process until finely chopped but there's still some texture.
