I love cocoa and spice because it reminds me of winter and Christmas. It reminds me of ginger-spiced hot chocolate and is a perfect bridge between the autumn and winter seasons. It's soft and light with a beautiful flavour that is not too chocolatey and it is not too spicy. It tastes nice and warming, going brilliantly with a cup of coffee in my favourite.

Spice Cake is one of my husband's favorite cakes of all time! Perhaps because it's not overly sweet, with just the right amount of spices, and a few tablespoons of cocoa powder which give this cake a chocolatey, rich flavor. In Germany, this cake is called Gew├╝rzkuchen (Gew├╝rz means spice) and is often baked around Christmas time. Whisk or sift the sugar, flours, cocoa powder, baking soda, salt, cayenne, and nutmeg into a large bowl and stir with a whisk until well blended. Put the coconut milk, oil, avocado, rum, vinegar, and vanilla extract in a blender and process until smooth (or put them in a large bowl and blend with an immersion blender until smooth).
